Ingredients
- 2L of milk
- 1 cinnamon stick
- 1 can of sweetened condensed milk
- 6 egg yolks
- 1 tsp vanilla extract
- ¼ cup rum
Preparation
- In a pot, pour the milk and add the cinnamon stick. Heat over medium until the milk is warm, but not boiling. Remove the cinnamon stick and set the milk aside.
- In a separate bowl, beat the egg yolks until the mixture lightens in color and becomes creamy.
- Slowly pour the warm milk over the egg mixture while continuously stirring to avoid cooking the eggs.
- Pour this mixture into a blender, add the sweetened condensed milk, vanilla extract, and rum. Blend well and pour the mixture into a pot to heat until it thickens.
- Remove from heat and let it cool. Once cooled, add the vanilla extract and alcohol (if using). Stir well.
- Pour the rompope into sterilized bottles and store in the refrigerator. It can be served cold or at room temperature.
