Ingredients

Dry Seasoning Recipe 

Ingredients:

  • ¼ cup Adobo Seasoning
  • 3 tablespoons Sea Salt
  • 1 tablespoon Black Pepper
  • ½ tablespoon Cumin
  • 1 tablespoon Garlic Powder
  • 1 tablespoon Paprika
  • ½ tablespoon Whole Oregano

 

Sofrito Recipe (Approx. Yield: 32 ounces)

Ingredients:

  • 3 each Green Bell Pepper, Chopped
  • 2 each Red Bell Pepper, Chopped
  • 2 each Frozen Whole Peruvian Yellow Chile, Chopped
  • ½ tablespoon Onions, Chopped
  • ¼ cup Recao Fresh, Chopped (Culantro)
  • ½ cup Cilantro, Chopped

 

Puerto Rican Slow Roasted Pork Recipe 

Ingredients:

  • 8 to 10 pounds piece Pork Shoulder, skinless
  • 8 each Whole Peeled Garlic Cloves
  • 4.5 ounces Puerto Rican Dry Seasoning
  • 6 tablespoons Sofrito-Puerto Rican
  • 4 cups water

Preparation

Dry Seasoning Recipe

Method of Preparation:

  1. Combine all the ingredients in a container.
  2. Thoroughly mix until everything is well incorporated.
  3. Cover the container and keep the seasoning at room temperature.

 

 

 

 

Sofrito Recipe

Method of Preparation:

  1. Place onions at the bottom of a container, followed by the rest of the ingredients.
  2. Blend the ingredients until you achieve a chunky puree.
  3. Pour the puree into a container, cover it, and refrigerate for 3 days.
  4. If not used within 3 days, divide into small containers, cover, and freeze. Thaw in the refrigerator 1 day before use.

 

 

Slow Roasted Pork Recipe

Method of Preparation:

  1. Place the pork into a large pan.
  2. Create small incisions in various spots on the pork and insert the garlic cloves.
  3. Rub both sides of the pork shoulder with the prepared seasoning.
  4. Follow by rubbing both sides with sofrito.
  5. Cover the pan with plastic wrap and refrigerate overnight.
  6. Preheat the oven to 300°F.
  7. Remove the plastic, add water, and cover the pan with aluminum foil. Place it in the oven.
  8. Cook for around 5 hours until the meat is tender and reaches an internal temperature of 180°F. The meat should be fall-apart tender.
  9. Remove from the oven, rest for 15 minutes, and place on a large cutting board.
  10. Chop the meat and place it in a bowl.
  11. Serve with options like Peruvian beans, rice, tacos, or tostadas.
  12. For leftovers, cut into small pieces, place in a container, cover, and freeze for several weeks. Thaw 1 day before use.
