Ingredients
1 cone (8 ounces) piloncillo
6 whole cloves
2 large whole cinnamon sticks
1 cup dried hibiscus flowers
12 tejocote, halved
6 guava, quartered
2 large Gala apples, cored and chopped
2 large oranges, halved and thinly sliced
1/4 cup tamarind pulp, thawed if necessary
1 cup pecan halves
1 cup prunes
1/2 cup raisins
1 (20-inch) stalk sugar cane, peeled, cut into 5-inch pieces and quartered lengthwise (optional)
Preparation
- In large saucepot, stir piloncillo, cloves, cinnamon sticks, flowers and 8 cups water; heat to a simmer over medium-high heat, stirring occasionally. Reduce heat to low; cover and simmer 30 minutes, stirring occasionally. Strain piloncillo mixture through fine-mesh strainer; discard solids.
- In same saucepot, heat piloncillo mixture and 16 cups water to a simmer over medium heat. Add tejocote, guava, apples, oranges, tamarind pulp, pecans, prunes and raisins; simmer 30 minutes or until fruit is tender. Makes about 7 quarts.
- Serve punch warm garnished with sugar cane pieces, if desired.
