You’re going to love this authentic Menudo recipe. It is made of beef tripe that’s been simmered for hours to develop a rich and satisfying broth.

Menudo is a Mexican stew made of beef tripe, or cow’s stomach. It is cooked in a red chile broth with hominy and served in large bowls. Topped with lime juice, onion, cilantro, and oregano.

It is one of Mexico’s most traditional recipes.

Ingredients

Beef Feet, cut into appx 3″ pieces
Water, 3 gal
Salt
Bay Leaves, appx 24 each
Chopped Onion, white
Garlic, peeled
Step #2
Beef Tripe, cut into appx 2 1/2″ cubes
Water, 1 gal
Menudo Sauce
Salt

Sauce for Menudo

Ingredients:
California Chile
Onion, brown
Garlic
Chef Merito Menudo Mix
Hot Water (3 gal)

 

Preparation

1  Place feet’s into pot, add water, reserve water to blend  onions, bay leaf’s and garlic.
2  Add salt and mix well.
3  Place onions, bay leaf’s and garlic into blender, add reserved water and blend until fine puree.
4  Add puree and mix well.
5  Cook for appx 1 1/2 hours or until tender, do not overcook
 

Step #2

6  Add tripe.
7  Add 1 gallon of water, mix well.
8  Cook for approx. 35 minutes.
9  Add menudo sauce and 9 oz of salt, mix well and cook for appx 10 minutes
10  Add salt, mix well.
11  Cook for approx. 10 minutes.
12  Pour into container and follow cooling procedures, once it’s properly chilled, label, cover and hold at <41°F at all times

 

Sauce Preparation:

1  Gather the chiles.
2  Remove the stems of the California Chiles.
3  Place chiles into container.
4  Add chef merito spices.
5  Add hot water and let it soak for appx 15 minutes.
6  Blend the chile with all the other ingredients and strain well.
7  Strain well.
8  Transfer to a container, cover, label and follow the proper packaging and refrigeration procedures.
