Jalapeños Rellenos (Jalapeño Poppers)

Ingredients

12 each       Large Fresh Jalapeños

12 ounces   Softened Cream Cheese

½                 Teaspoon Garlic Granulated

½ teaspoon Sea Salt

6 ounces      Shredded Cheddar Cheese

3 tablespoons     Bacon Bits

3 tablespoons    Fine Diced Chives

¾ cup     Panko Breadcrumbs

2 tablespoons     Melted Salted Butter

1 cup     Ranch Dressing for dipping

1 tablespoon     Fine Diced Fresh Chives for garnish, optional

Preparation

1. Sliced jalapeños in half lengthwise.
2. With gloves and with a small spoon, remove seeds and membranes.
3. In a mixing bowl, mix cream cheese, garlic granulated, sea salt, cheddar cheese, bacon bits, and chives.
4. In a separate bowl, combine panko breadcrumbs, and melted butter.
5. Fill jalapeños with cream cheese mixture.
6. Place filled jalapeños on a sheet pan.
7. Top with panko breadcrumbs mixture.
8. Place it in a pre-heated oven at 375ºF and bake for 15 to 18 minutes or until golden.
9. Remove from oven, let it cool for 5 to 10 minutes before serving.
10. Place jalapeño poppers on a platter.
11. Spoon ranch dressing into bowl, place bowl next to poppers.
12. Garnish with fine diced fresh chives, optional.
