Elote Esqueleto de Halloween (Halloween Skeleton Elote)

This recipe takes traditional elote and gives it a playful, eerie makeover, perfect for Halloween gatherings. Ingredients

1/2 cup mayonnaise 

2 teaspoons lime zest 

1 teaspoon salt 

1 teaspoon ground black pepper 

1/4 teaspoon cayenne pepper 

1/4 teaspoon smoked paprika plus additional for garnish (optional) 

6 medium ears fresh corn, husks and silks removed, cut lengthwise into quarters 

2 tablespoons fresh lime juice 

1/4 cup grated Cotija cheese 

2 tablespoons finely chopped cilantro 

Preparation

  1. Preheat oven to 425°; line rimmed baking pan with aluminum foil. In small bowl, stir mayonnaise, lime zest, salt, black pepper, cayenne pepper and paprika. Brush both sides of corn pieces with 1/4 cup mayonnaise mixture; place on prepared pan and bake 25 minutes or until corn is tender. Makes 24 pieces corn.

 

  1. Stir lime juice into remaining mayonnaise mixture. Makes about 6 tablespoons mayonnaise mixture.

 

  1. Arrange corn pieces on parchment-lined serving platter to resemble a skeletal rib cage; drizzle with lime juice mixture, and sprinkle with cheese, cilantro and paprika, if desired.
