Ingredients

4 (8-inch) wooden or metal skewers 

1/3 cup mayonnaise 

1 teaspoon lime zest 

1/2 teaspoon ground black pepper 

1/8 teaspoon ground cayenne pepper 

1/4 cup grated Cotija cheese 

2 tablespoons finely chopped cilantro 

1/2 tablespoon sazón seasoning 

4 medium ears fresh corn, husks and silks removed 

2 tablespoons unsalted butter, melted 

Lime wedges for garnish (optional) 

Preparation

  1. Prepare outdoor grill for direct grilling over medium-high heat; if using wooden skewers, soak in water 20 minutes. In small bowl, stir mayonnaise, lime zest, black pepper and cayenne pepper. Makes about 1/3 cup mayonnaise mixture.

 

  1. In separate small bowl, stir cheese, cilantro and seasoning. Makes about 1/3 cup cheese mixture.

 

  1. Insert skewers halfway into 1 end of each ear of corn; brush corn with butter. Place corn on hot grill rack; cover and cook 8 minutes or until grill marks appear, turning every 2 minutes. Spread corn with mayonnaise mixture, then sprinkle with cheese mixture. Makes 4 street corn.
