Ingredients

1/2 small red onion, finely chopped
1/3 cup fresh lime juice
1 pound cooked 26-30 count tail-off peeled and deveined shrimp, thawed if necessary
1 large jalapeño pepper, finely chopped
1/2 medium cucumber, finely chopped
1 1/2 cups finely chopped tomatoes
1 teaspoon salt
1 teaspoon fresh ground black pepper
1 1/2 cups tomato clam cocktail juice
1/2 cup chili sauce
1/2 cup ketchup
1/3 cup chopped fresh cilantro
2 tablespoons hot sauce
2 avocados, peeled, pitted and diced
Lime wedges, saltine crackers and/or tortilla chips for serving (optional)

Preparation

1. In large bowl, toss onion and lime juice; let stand 10 minutes.

2. In separate large bowl, toss shrimp, jalapeño, cucumber, tomatoes, salt and black pepper.

3. Stir cocktail juice, chili sauce, ketchup, cilantro and hot sauce into onion mixture. Stir cocktail juice mixture into shrimp mixture; fold in avocados. Cover and refrigerate at least 1 hour or until chilled. Makes about 8 cups.

4. Serve shrimp cocktail with lime wedges, saltine crackers and/or tortilla chips, if desired.
