Chorizo con Papas Skillet Recipe

Papas con chorizo is a classic Mexican breakfast. Requiring very few ingredients and absolutely jam packed with flavor, this is a recipe you need in your meal rotation.

It is also incredibly versatile, perfect for filling tacos, tortas, gorditas, and burritos, and for topping sopes, tostadas, and more.

Ingredients:

  • 1 ounce vegetable oil
  • 1 ounce fresh chopped garlic
  • 8 ounces onions diced
  • 16 ounces Mexican Chorizo, casings removed
  • 24 ounces Yukon Potatoes, cut into 1” cubes and fried
  • 2 ounces pico de gallo (for garnish)
  • 1 ounce sour cream (for garnish)

Preparation:

1. Heat the olive oil in a large skillet over medium heat.
2. Add the onions and garlic and cook for another 3 minutes until the onions are softened.
3. Add the chorizo and cook until it starts to brown and is fully cooked.
4. Salt and pepper the potatoes and bake until golden brown.
5. Add baked potatoes to chorizo mixture and mix well.
6. Pour potatoes with chorizo mixture into serving dish.
7. Garnish with pico de gallo and sour cream.
8. Serve with warm flour or corn tortillas.

Chorizo Queso Dip Recipe

Chef Jesse’s Chorizo Cheese Dip will become one of your new favorite appetizers. Cheese and spices come together to make it irresistible!

Ingredients:

  • 16 ounces Chorizo, casing removed
  • 16 ounces Velveeta Cheese, cut into small pieces
  • 1 cup Mild Rotel Tomatoes, drained
  • 1 ounce Fresh Jalapeño, seeded and diced
  • 1 cup Milk
  • ½ cup Mild Cheddar Cheese, cut into pieces
  • 2 ounces Pico de Gallo (for garnish)
  • 1 ounce Sour Cream (for garnish)

Preparation

1. Remove casing from chorizo then cut into small pieces.
2. In a saucepan, cook chorizo until fully cooked, remove about 2 ounces of cooked chorizo and set on the side for garnish.
3. Add all remaining ingredients into saucepan.
4. Heat in low heat until cheeses and all ingredients are completely melted.
5. Pour into serving dish, garnish with cooked chorizo, pico de gallo and sour cream.
