Ingredients

Nonstick cooking spray

6 large eggs

1/4 teaspoon salt

1/4 teaspoon ground black pepper

2 cups roasted salsa verde plus additional for serving (optional)

1/2 (14-ounce) bag tortilla chips

2 radishes, thinly sliced

1 avocado, peeled, pitted and thinly sliced

1 jalapeño pepper, thinly sliced crosswise

1/2 cup crumbled queso fresco

1/2 cup Mexican crema

1/3 cup pickled red onion

2 tablespoons chopped fresh cilantro

Preparation

1. Heat large, nonstick skillet over medium heat; spray with cooking spray. In medium bowl, whisk eggs, salt and black pepper; add to skillet and cook 4 minutes or to desired doneness, stirring occasionally to scramble. Transfer eggs to plate; cover to keep warm.

 

2. In same skillet, cook salsa over medium heat 5 minutes or until slightly thickened, stirring occasionally. Add 3 cups chips; stir to coat. Stir in remaining 2 cups chips to coat; cook 1 minute or until chips are slightly softened. Add eggs; cook 1 minute or until heated through, stirring occasionally. Makes about 8 cups chilaquiles.

 

3. Serve chilaquiles topped with radishes, avocado, jalapeño, queso fresco, crema, onion, cilantro and salsa, if desired.
