Ingredients

1 1/4 pounds raw 51-60 count peeled and deveined shrimp, thawed if necessary and coarsely chopped 

1/2 cup plus 2 tablespoons fresh lemon juice 

1/2 cup plus 2 tablespoons fresh lime juice 

2 medium Roma tomatoes, halved lengthwise, seeded and finely chopped 

1 large avocado, peeled, pitted and chopped 

1/2 cup finely chopped cucumber 

1/2 cup Clamato® or tomato juice 

1/3 cup finely chopped red onion 

1/4 cup chopped fresh cilantro 

2 tablespoons seeded and minced serrano chile pepper 

1/2 teaspoon salt 

Saltine crackers and/or Vallarta® Supermarkets Tortilleria Corn Tostadas for serving (optional) 

Lime wedges for garnish (optional) 

Preparation

  1. In medium bowl, toss shrimp, and 1/2 cup each lemon juice and lime juice; cover and refrigerate at least 1 hour or until shrimp are opaque, stirring occasionally. 
  1. Pour off liquid from shrimp mixture. Add tomatoes, avocado, juice, cucumber, onion, cilantro, serrano, salt, and remaining 2 tablespoons each lemon juice and lime juice; toss. Makes about 5 cups ceviche.
  1. Serve ceviche immediately with saltine crackers and/or tostadas garnished with lime wedges, if desired.
