/4 cup chopped fresh cilantro plus additional for garnish (optional)
1/4 cup chopped fresh mint plus additional for garnish (optional)
1/4 cup chopped jalapeño pepper
1/4 cup chopped shallots
1/4 cup fresh orange juice
2 tablespoons fresh lime juice
2 tablespoons olive oil
2 teaspoons lime zest
1 teaspoon kosher salt
1 teaspoon salt-free lemon pepper seasoning
2 small jícamas, peeled and chopped
1 large avocado, peeled, pitted and chopped
2 cups chopped ripe pineapple


1. In large bowl, whisk cilantro, mint, jalapeño, shallots, orange juice, lime juice, oil, lime zest, salt and seasoning. Add jícamas, avocado and pineapple; toss. Cover and refrigerate at least 30 minutes or up to 3 hours to allow flavors to meld. Makes about 6 cups.

2. Serve ceviche garnished with cilantro and/or mint, if desired.
