Ingredients

500g of beef, thinly sliced sirloin
200g of bacon, finely sliced
4 cups of beef broth
3 tablespoons of oil
1 teaspoon of ground cumin
Salt and pepper to taste
For the tomatillo sauce:
200g of green tomatillos
1 white onion
1 bunch of cilantro (including stems)
2 serrano chilies
2 garlic cloves
1 teaspoon of ground cumin
2 cups of cooked beans
1 cup of chopped cilantro
Spring onions
Radishes (sliced or chopped)
Lime
Corn tortillas

Preparation

Add the tomatillos, onion, garlic, cilantro, serrano chilies, and cumin to a blender. Pour in one cup of beef broth and blend until smooth. Set aside.

Cut the beef into strips and then into small pieces. Season with cumin, salt, and pepper. Slice the bacon into strips as well.

Heat one tablespoon of oil in a large skillet over medium heat. Add the bacon and cook, stirring constantly, until crispy. Remove the bacon from the skillet and set it aside. Add the remaining oil to the skillet and add the beef. Sear until the meat is no longer pink but still has its juices.

Pour in the tomatillo sauce, add the crispy bacon, and the remaining beef broth. Bring to a boil, cover the pot, and cook for one hour, stirring occasionally and adding more broth if needed. Adjust seasoning to taste and turn off the heat.

Divide the beans into six deep plates or bowls. Serve the beef stew over the beans, ensuring there is plenty of broth. Garnish with spring onions, cilantro, and radishes. Serve with warm corn tortillas.
