Ingredients

To make carne con chile y rajas, you will need:

1 pound of beef, cut into bite-sized pieces
3 poblano peppers, roasted, peeled, and sliced into strips
2 tomatoes, chopped
1 onion, chopped
2 garlic cloves, minced
2 tablespoons of vegetable oil
1 teaspoon of ground cumin
1 teaspoon of dried oregano
1 teaspoon of salt
1/2 teaspoon of black pepper
1 cup of beef broth
1/4 cup of chopped fresh cilantro

Preparation

Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook until browned on all sides.

Add the onion and garlic to the skillet and cook until the onion is translucent.

Add the chopped tomatoes, cumin, oregano, salt, and black pepper to the skillet. Stir to combine and cook for a few minutes until the tomatoes have softened.

Add the roasted poblano pepper strips to the skillet and stir to combine.

Pour in the beef broth and bring to a simmer. Reduce the heat to low and cover the skillet.

Allow the carne con chile y rajas to simmer for 30-40 minutes, or until the beef is tender and the flavors have melded together.

Remove from heat and stir in the chopped cilantro.

Serve the carne con chile y rajas hot, with tortillas or rice on the side.
