Ingredients
4 cups all-purpose flour
2 egg yolks + 1 egg white
1/2 tsp baking powder
1/2 cup vegetable shortening
Juice & zest of 3 oranges
Oil for frying
1 cup sugar + 1 tsp cinnamon
Preparation
Pour the all-purpose flour into a large container and make a dish with the flour to add the yolks and egg white; Immediately add the melted butter and mix with the orange zest and juice. At the end we add the baking powder and mix well.
Make a ball with the dough and let it rest for 1 hour, cover it with a damp cloth or with kitchen plastic.
Form balls to the desired size of your fritters, and roll them out with a flour tortilla rolling pin. By this time you should have already heated the oil following the tips I mentioned.
You spread the tortilla a little with your hands, fingers.
Once the tortilla is made we add it to the hot oil for 10 seconds and turn 10 seconds and turn again, in total they turn 3 times, I have seen that when doing this they brown better without burning or darkening.
