Ingredients

1/2 pound cooked 51-60 count tail-off peeled and deveined shrimp, thawed if necessary 

1/2 medium serrano pepper, halved lengthwise, seeded and finely chopped 

1/4 cup finely chopped red onion 

3 tablespoons finely chopped celery 

3 tablespoons finely chopped cucumber 

3 tablespoons finely chopped red bell pepper 

3 tablespoons finely chopped radishes plus additional for garnish (optional) 

2 tablespoons creamy cilantro lime dressing 

2 tablespoons mayonnaise 

1/2 teaspoon kosher salt 

1/2 teaspoon fresh ground black pepper 

4 avocados, peeled and pitted 

Preparation

  1. In large bowl, toss shrimp, serrano pepper, onion, celery, cucumber, bell pepper, radishes, dressing, mayonnaise, salt and black pepper. Makes about 3 cups.
