Ingredients

Tomato-Chipotle Salsa 

3 Roma tomatoes, quartered lengthwise 

1/2 medium yellow onion, coarsely chopped 

3 garlic cloves 

2 chipotle peppers in adobo sauce 

2 tablespoons fresh lime juice 

1/4 teaspoon salt 

Tostadas 

1 1/2 cups chopped green cabbage 

2 tablespoons fresh lime juice 

3/4 teaspoon salt 

1 tablespoon olive oil 

1 pound 90% lean ground beef 

1/2 medium yellow onion, finely chopped 

3 garlic cloves, minced 

1 chipotle pepper in adobo sauce, finely chopped 

2 teaspoons ancho chili powder 

2 teaspoons Mexican oregano 

1/2 teaspoon ground black pepper 

1/2 teaspoon ground cumin 

1 cup refried black beans, warmed 

8 mini tostadas rancheritas 

Chopped fresh cilantro and/or crumbled queso fresco for garnish (optional) 

Preparation

Tomato-Chipotle Salsa 

  1. Preheat oven to 425°; line rimmed baking pan with aluminum foil. Spread tomatoes and onion in single layer on prepared pan; roast 25 minutes or until starting to brown. Transfer tomato mixture to blender. Add garlic, chipotle peppers, lime juice and salt; purée until smooth. Makes about 1 1/4 cups salsa.

 

Tostadas 

  1. In small bowl, toss cabbage, lime juice and 1/4 teaspoon salt; let stand 10 minutes. Makes about 1 1/2 cups cabbage mixture.

 

  1. In large skillet, heat oil over medium-high heat. Add beef and onion; cook 8 minutes or until browned, breaking up beef with side of spoon. Add garlic, chipotle pepper, chili powder, oregano, black pepper, cumin and remaining 1/2 teaspoon salt; cook 2 minutes or until fragrant, stirring frequently. Add 3/4 cup water; cook 3 minutes or until slightly thickened, stirring frequently. Makes about 2 1/2 cups beef mixture.

 

  1. Spread beans over tostada shells; top with beef mixture, cabbage mixture and salsa. Garnish tostadas with cilantro and/or queso fresco, if desired. Makes 8 tostadas.
