Ingredients

3 dried guajillo chile peppers, halved lengthwise and seeded 

2 dried ancho chile peppers, halved lengthwise and seeded 

4 garlic cloves 

1 small white onion, halved and finely chopped plus additional for serving (optional) 

3 cups fresh pineapple chunks 

1/2 cup fresh orange juice 

1 tablespoon crumbled achiote paste 

1 tablespoon Mexican oregano 

2 teaspoons ground cumin 

2 teaspoons salt 

2 teaspoons ground black pepper 

2 teaspoons chopped fresh thyme 

2 1/2 pounds boneless pork shoulder, thinly sliced 

12 (6-inch) corn tortillas 

Chopped fresh cilantro and/or favorite salsa for serving (optional) 

Preparation

  1. Soak chiles in boiling water 10 minutes or until softened. In blender, purée garlic, onion, 1 cup pineapple, orange juice, achiote, oregano, cumin, salt, black pepper, thyme and softened chiles until smooth. Place pork in large zip-top plastic bag; pour garlic mixture over pork. Seal bag, pressing out excess air; refrigerate at least 4 or up to 12 hours.

 

  1. Prepare outdoor grill for direct grilling over medium heat. Remove pork from marinade; discard marinade. Place pork on hot grill rack; cover and cook 10 minutes or until internal temperature of pork reaches 145°, turning once. Place remaining 2 cups pineapple on hot grill rack; cover and cook 3 minutes or until grill marks appear. Transfer pork and pineapple to cutting board; tent with aluminum foil and let stand 5 minutes. Chop pork and pineapple into 1/2-inch pieces.

 

  1. Place tortillas on hot grill rack; cook 1 minute or until grill marks appear, turning once.

 

  1. Serve pork and pineapple in tortillas topped with cilantro, onion and/or salsa, if desired.
