Sopa de Fideo (Fideo Noodle Soup)

Ingredients

4 garlic cloves 

3 Roma tomatoes, quartered 

1 medium yellow onion, quartered 

8 cups chicken broth 

1 tablespoon olive oil 

1/2 (16-ounce) box fideo pasta 

2 cans (7.75 ounces each) Mexican hot style tomato sauce 

1 teaspoon ground cumin 

1/2 teaspoon salt 

1/2 teaspoon ground black pepper 

Chopped avocado, fresh cilantro and/or sour cream for garnish (optional)  

Preparation

  1. In blender, purée garlic, tomatoes, onion and 2 cups broth until smooth; strain through fine-mesh strainer into medium bowl and discard solids. Makes about 3 1/4 cups garlic mixture.

 

  1. In large saucepot, heat oil over medium-high heat. Add pasta; cook 2 minutes or until toasted, stirring frequently. Add sauce, cumin, salt, pepper, garlic mixture and remaining 6 cups broth; cover and cook 8 minutes or until pasta is tender, stirring occasionally. Remove from heat; let stand 10 minutes. Makes about 10 cups soup.

 

  1. Serve soup garnished with avocado, cilantro and/or sour cream, if desired.
