1/3 cup mayonnaise

1 tablespoon chili crisp

1 tablespoon fresh lime juice

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1 can (12 ounces) solid white albacore tuna in water, drained

1/4 cup thinly sliced green onions

1/4 cup finely chopped red onion

1 tablespoon finely chopped parsley

8 slices sourdough or Italian bread

1/4 cup unsalted butter

1 cup shredded habanero Jack cheese

In a large bowl, whisk together the mayonnaise, chili crisp, lime juice, salt, and black pepper until smooth. Add the drained tuna, green onions, red onion, and parsley, and gently mix until everything is evenly combined.

Spread butter on one side of each slice of bread. Turn the slices over and divide the tuna mixture evenly among four slices. Top with shredded habanero Jack cheese and cover with the remaining bread slices, keeping the buttered sides facing outward.

Heat a large skillet over medium-low heat. Working in batches, cook the sandwiches for about 8 minutes, turning once, until the bread is golden brown and the cheese is melted. Press lightly with a spatula for even browning. Serve warm.
