Salpicón de Res (Beef Salad)

This traditional chilled beef salad is a refreshing, high-protein meal that’s perfect for warm days or utilizing leftover beef. The combination of cooling mint, crunchy radishes, and bright citrus creates a sophisticated flavor profile that is remarkably easy to assemble.

Ingredients

3 cups finely chopped cooked, shredded beef such as leftover brisket or flank steak

4 large radishes, finely chopped

1 large tomato, finely chopped

1/2 medium red onion, finely chopped

1/4 cup chopped fresh mint

1 tablespoon chopped fresh cilantro

2 tablespoons bitter orange juice or fresh orange juice

2 tablespoons fresh lime juice

1/2 teaspoon salt

1/2 teaspoon ground black pepper

Preparation

1. In large bowl, toss beef, radishes, tomato, onion, mint, cilantro, juices, salt and pepper; cover and refrigerate 1 hour or until chilled. Makes about 5 cups.

 

2. Serve salpicón on tostadas along with guacamole and/or hot sauce, if desired.
