Salmon Rice Bowl

This Salmon Rice Bowl is packed with fresh ingredients and bold flavor in every bite. Ingredients

1 1/4 pounds skinless salmon fillets, cut into 1-inch pieces

1 tablespoon Vallarta Supermarkets® Salsa Inglesa

1/2 tablespoon sriracha sauce

1/2 tablespoon toasted sesame oil

1/2 teaspoon garlic powder

1/2 teaspoon ground ginger

1/2 teaspoon sesame seeds plus additional for garnish (optional)

1/8 teaspoon cayenne pepper

2 cups dry long grain white rice

2 medium avocados, peeled, pitted and sliced

2 cups shredded carrots

2 cups thinly sliced cucumber

1/4 cup yum yum sauce

1/4 cup thinly sliced green onions

Crushed red pepper flakes and/or furikake seasoning (optional)

Preparation

1. In large bowl, stir salmon, salsa inglesa, sriracha and sesame oil; sprinkle with garlic powder, ground ginger, sesame seeds and cayenne pepper. Toss salmon mixture to coat; let stand 10 minutes.

 

2. Prepare rice on stovetop as label directs. Makes about 5 cups rice.

 

3. Preheat 3-quart air fryer to 400° for 5 minutes. Add salmon mixture in single layer; air fry 5 minutes or until crisp and internal temperature reaches 145°, turning once.

 

4. Divide rice into 4 bowls; top with salmon, avocados, carrots, cucumbers, yum yum sauce and green onions. Garnish bowls with sesame seeds, crushed red pepper and/or furikake seasoning, if desired.
