½ (12-oz) bag semisweet chocolate chips

¾ cup unsalted butter (1½ sticks)

4 large eggs, divided

½ cup heavy cream

1 teaspoon vanilla extract, divided

1½ cups all-purpose flour, divided

½ teaspoon baking powder

¼ teaspoon salt

1 tablespoon red food coloring

1 package (8 oz) cream cheese, softened

Preparation

Prepare the Pan & Chocolate Base
Preheat the oven to 350°F. Lightly spray an 8-inch square baking dish with nonstick cooking spray. In a small saucepan over low heat, melt the chocolate chips and butter together, stirring frequently, until smooth. Remove from heat and let cool slightly. -
Make the Red Velvet Brownie Batter
In a large bowl, whisk together 3 eggs, ¾ cup granulated sugar, heavy cream, and ½ teaspoon vanilla extract. Slowly whisk in the melted chocolate mixture until combined. Add 1¼ cups flour, baking powder, and salt, mixing until smooth. Stir in the red food coloring. Pour half of the batter into the prepared baking dish and spread evenly. -
Prepare the Cream Cheese Swirl
In another bowl, whisk together the softened cream cheese, remaining egg, remaining ¼ cup sugar, and remaining ½ teaspoon vanilla extract until smooth. Whisk in the remaining ¼ cup flour.Spread about one-third of the cream cheese mixture evenly over the brownie batter. Top with the remaining brownie batter. Drop spoonfuls of the remaining cream cheese mixture over the top, then gently swirl with a butter knife to create a marbled effect.

Bake & Cool
Bake for 35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow brownies to cool completely in the pan on a wire rack. -
Serve
Once cooled, cut into 16 brownies and enjoy.
