Ingredients

1 large jalapeño pepper, stemmed, seeded and finely chopped 

1 small yellow onion, halved and finely chopped 

1 tablespoon olive oil 

1/2 pound ground Mexican chorizo 

3 cups grated Oaxaca cheese 

1/2 cup chopped Roma tomatoes 

1 tablespoon chopped fresh cilantro 

Warm flour tortillas and/or tortilla chips for serving (optional) 

Preparation

  1. Preheat oven to 375°. Heat medium oven-safe skillet over medium-high heat. Add jalapeño, onion and oil; cook 3 minutes or until tender, stirring frequently. Transfer jalapeño mixture to medium bowl.

 

  1. In same skillet, cook chorizo over medium-high heat 5 minutes or until browned, breaking up chorizo with side of spoon. With slotted spoon, transfer chorizo to bowl with jalapeño mixture; stir in cheese. Discard drippings in skillet. Spread cheese mixture in skillet; bake 15 minutes or until cheese is melted. Makes about 4 cups.

 

  1. Serve queso fundido topped with tomatoes and cilantro along with tortillas and/or chips, if desired.
