Pupusas de Frijoles Rojos y Queso (Red Bean and Cheese Pupusas)

Pupusas are a delicious and comforting dish made with thick, handmade corn tortillas filled with creamy refried beans and melted cheese. Crispy on the outside and soft on the inside, they pair perfectly with curtido (a tangy cabbage slaw) and salsa roja.

Making pupusas at home is easier than you think! With just a few simple ingredients, you can enjoy this flavorful and satisfying dish straight from your own kitchen.

Ingredients

1/4 cup plus 2 tablespoons avocado oil 

1/2 small yellow onion, coarsely chopped 

1 can (15 ounces) dark red kidney beans, undrained 

1 1/2 cups shredded Oaxaca cheese 

6 cups instant corn masa flour 

2 teaspoons salt 

Pickled curtido slaw and/or salsa roja for serving (optional) 

Preparation

  1. In large nonstick skillet, heat 2 tablespoons oil over high heat. Add onion; cook 3 minutes or until charred, stirring occasionally. Transfer onion to blender. Add beans with their liquid; purée on high until smooth. Transfer bean mixture back to same skillet; cook over medium-high heat 4 minutes or until thickened. Cool bean mixture to room temperature; stir in cheese. Makes about 2 cups.

 

  1. In large bowl, stir flour and salt; gradually stir in 5 cups water. Let dough stand 15 minutes. With hands, knead dough until a smooth dough forms, adding more water if necessary. With wet hands, form dough into 12 (3-inch) balls; flatten balls into 5-inch disks. Place about 2 1/2 tablespoons bean mixture in center of each disk; bring sides of dough up over filling and pinch together to form a ball. Lightly pat balls into 5-inch disks (about 1/2-inch thick).

 

  1. In 6 batches, in large skillet, heat 1/2 tablespoon oil over medium-high heat. Add pupusas; cook 6 minutes or until lightly browned, turning once. Makes 12 pupusas.

 

  1. Serve pupusas topped with curtido and/or salsa, if desired.
