Pozole Clásico (Classic Pozole)

Ingredients
3 dried ancho chile peppers, stemmed
2 dried chile de árbol peppers, stemmed
2 dried guajillo chile peppers, stemmed
3 1/2 pounds boneless pork shoulder, cut into 2-inch pieces
4 garlic cloves, halved and coarsely chopped
2 bay leaves
1 large yellow onion, coarsely chopped
8 cups unsalted chicken broth
1 teaspoon cumin seeds
1 teaspoon dried Mexican oregano
1 teaspoon salt
1/2 teaspoon ground black pepper
2 cans (25 ounces each) Mexican style hominy, drained and rinsed
Shredded green cabbage, chopped cilantro, sliced radishes and/or lemon or lime wedges for garnish (optional)
Preparation
- Soak chiles in 3 cups hot water 30 minutes or until softened.
- In large covered saucepot, cook pork, garlic, bay leaves, onion, broth, cumin seeds, oregano, salt and black pepper over medium-high heat 40 minutes or until pork and onion are tender.
- In blender, purée chile peppers and soaking water 1 minute or until almost smooth. Add chile mixture to saucepot with pork mixture; reduce heat to medium-low. Add hominy; cover and cook 1 hour 15 minutes or until pork is very tender and falling apart. Remove bay leaves. Makes about 14 cups pozole.
- Serve pozole garnished with cilantro, cabbage, lemon or lime wedges, and/or radishes, if desired.
