Ingredients

Nonstick cooking spray 

8 medium poblano peppers 

2 tablespoons avocado oil 

1 small yellow onion, halved and finely chopped 

3 garlic cloves, minced 

2 Roma tomatoes, finely chopped 

2 teaspoons Mexican oregano 

1 teaspoon ground cumin 

3 cups shredded skinless rotisserie chicken breast meat 

2 cups shredded Chihuahua cheese 

1/4 cup chopped fresh cilantro 

Mexican crema and/or hot sauce for serving (optional) 

Preparation

  1. Preheat oven to 425°; spray 13 x 9-inch baking dish with cooking spray. Slice 1/2 inch off top of peppers and make a 3-inch lengthwise slit through 1 side of each pepper; remove seeds and inner membranes from peppers.

 

  1. In large skillet, heat oil over medium-high heat. Add onion; cook 3 minutes or until tender, stirring frequently. Add garlic and tomatoes; cook 2 minutes or until fragrant, stirring frequently. Add oregano and cumin; cook 2 minutes or until fragrant, stirring frequently. Remove from heat; stir in chicken, cheese and cilantro. Makes about 5 cups chicken mixture.

 

  1. Fill peppers with chicken mixture and place, chicken mixture side up,  in prepared dish; bake 20 minutes or until peppers are tender. Turn broiler to high; broil peppers 3 minutes or until lightly charred. Makes 8 stuffed poblanos.

 

  1. Serve stuffed poblanos drizzled with crema and/or hot sauce, if desired.
