Ingredients
- 4 tomatillos
- 3 tomatoes
- ½ white onion, cut in half
- 2 jalapeño peppers
- 2 cloves of garlic
- 5 sprigs of cilantro
- 1 teaspoon salt
- 2 teaspoons oil
Preparation
- Place the tomatillos, tomatoes, onion halves, jalapeños, and garlic cloves in a medium saucepan.
- Fill the saucepan with water until the ingredients are completely covered and bring to a boil over high heat.
- Reduce the heat to low, cover, and simmer for 5 minutes. Drain and set aside.
- Make the red sauce by adding the cooked roma tomatoes, 1 onion half, 1 jalapeño, 1 garlic clove, and ½ teaspoon salt to a blender. Blend until smooth.
- Heat 1 teaspoon of oil in a small saucepan over medium-high heat. Carefully pour the blended red sauce into the pan and fry lightly for 1 minute, stirring frequently. Transfer to a bowl, taste, and add more salt if necessary. Cover and set aside.
- Make the green sauce by adding the cooked tomatillos, the other onion half, 1 jalapeño, 1 garlic clove, 5 sprigs of cilantro, and ½ teaspoon salt to a blender. Blend until smooth.
- Heat the remaining 1 teaspoon of oil in a small saucepan over medium-high heat. Carefully pour the blended green sauce into the pan and fry lightly for 1 minute, stirring frequently. Transfer to a bowl, taste, and add more salt if necessary. Cover and set aside.
- Fry the eggs by heating 1 tablespoon of oil in a large non-stick skillet over medium heat. Carefully crack the eggs, keeping them separate, and cook for 3 minutes or until the whites are set. Remove from heat.
- Place 2 eggs on a plate. Pour half of the red sauce around one egg and half of the green sauce around the other. Garnish with a little Cotija cheese or fresh cheese and chopped cilantro. Serve with refried beans and warm corn tortillas.
