For the pork:

  • 1kg pork loin, cut into pieces

  • 3 cups water

  • 6 large garlic cloves (4 for cooking, 2 raw for marinade)

  • ½ large onion

  • 2 bay leaves

  • Salt and pepper to taste

For the marinade:

  • 3 guajillo chiles, seeded & rinsed

  • 2 ancho chiles, seeded & rinsed

  • 1 tsp oregano

  • 10 whole peppercorns

  • ½ tsp ground cumin

  • 1 tbsp chicken bouillon powder

  • ¼ cup apple cider or white vinegar

  • 2 tbsp vegetable oil

For serving:

  • Flour tortillas

  • Chopped onion & cilantro

  • Your favorite salsa

  • Lime wedges

Preparation

How to make it:

  1. In a large pot, add pork, 3 cups water, 4 garlic cloves, ¼ onion, bay leaves, salt & pepper.

  2. Cook covered over medium-low heat for 1 hour and 40 minutes, until tender.

  3. Add dried chiles to the pot. Let them soak in the juices for 20 mins over medium heat.

  4. In a blender, combine: soaked chiles, remaining 2 garlic cloves, ¼ onion, oregano, peppercorns, cumin, bouillon, vinegar, and 3-4 tbsp of the meat juice.
    Blend until smooth (about 2 mins).

  5. Shred the pork with a fork and set aside.

  6. In the same pot, heat 1 tbsp oil, add shredded pork, and fry for 4 minutes until slightly crispy.

  7. Pour in the blended adobo and mix well.
    Cook for 6-8 minutes, stirring occasionally, so all the flavors come together.

  8. Serve on warm flour tortillas topped with onion, cilantro, lime, and your favorite salsa!
