Ingredients (Approx. 6-1/2 Cups)

  • 3 tablespoons Vegetable oil
  • 2 cups Diced white onion
  • 3 cloves Garlic, chopped
  • 2 tablespoons All-purpose flour
  • 3 cups Tomatillos, husked and chopped
  • 1 bunch Chopped cilantro
  • 2 teaspoons Salt
  • 1 tablespoon Fish Seasoning
  • ¼ teaspoon Ground cumin
  • ½ teaspoon Sugar
  • 3 cups Water
  • 2 cups Fire Roasted Hatch Chiles, peeled, seeded, stemless, diced

Vegetable Mixture (Approx. 3 servings of 2 cups each)

Ingredients

  • 1 each ½” Diced Zucchini
  • 1 each ½” Diced Yellow Squash
  • 1 each ½” Diced Red Bell Pepper
  • 1 each ½” Diced Orange Bell Pepper
  • 1 cup Shredded Carrots

  • 1 tablespoon Vegetable Oil
  • ¼ teaspoon Salt
  • Pinch Black Pepper
  • 2 cups Vegetable Mixture

Salmon with Hatch Chile Green Sauce (1 serving)

Ingredients

  • ½ teaspoon Fish Seasoning
  • ¼ teaspoon Black Pepper
  • 8 ounces Salmon Fillet
  • 2 tablespoons Vegetable Oil
  • 2 cups Cooked Vegetable Mixture
  • 1 cup Hatch Chile Green Sauce
  • ½ tablespoon Chopped Cilantro, for garnish
  • 3 ounces Rice (Vallarta Red Rice optional)

Method of Preparation

  1. Heat oil in a large pot over medium heat. Add garlic and onions and cook until onions are translucent.
  2. Add flour and mix well until combined.
  3. Add tomatillos, cilantro, salt, fish seasoning, cumin, sugar, and water. Mix well and cook until tomatillos are tender, about 10-15 minutes.
  4. Remove from heat and let the mixture cool slightly.
  5. Transfer the mixture to a blender and blend until smooth.
  6. Return the blended sauce to the pot, add diced Hatch Chiles, and cook for approximately 3 minutes over medium heat.
  7. Pour the sauce into a container, cover, and refrigerate until needed.
  8. Store in the refrigerator for up to 3-4 days.

Vegetable Mixture (Approx. 3 servings of 2 cups each)

Method of Preparation

  • Place all diced vegetables into a container.
  • Mix well, cover, and refrigerate until ready to be used.

Salmon with Hatch Chile Green Sauce (1 serving)

Method of Preparation

  1. Season salmon with fish seasoning and pepper on both sides.
  2. Heat oil in a sauté pan over medium heat.
  3. Cook salmon for approximately 3 minutes on each side or until cooked through.
  4. Pour ¾ cup of hot Hatch Chile Green Sauce in the center of a plate.
  5. Place the cooked salmon in the center of the plate over the sauce.
  6. Arrange the cooked vegetables on the side of the salmon.
  7. Pour the remaining ¼ cup of hot Hatch Chile Green Sauce over the salmon.
  8. Sprinkle chopped cilantro over the salmon.
  9. Serve with red rice, if desired.
