Elote con Crocante (Street Corn with Crunch)

Elote con Crocante is a tasty twist on classic Mexican street corn. Elote is a favorite, with its creamy mayo, tangy cheese, and spicy chili coating. This version brings an extra crunch by adding Diana Palitos Spicy Lime, giving it a zesty kick that takes it to the next level! Perfect for backyard cookouts, family parties, or as a street snack, this elote is sure to be a crowd-pleaser.

Ingredients

4 (8-inch) wooden or metal skewers 

1/3 cup mayonnaise 

2 tablespoons finely chopped cilantro 

1 teaspoon lime zest 

1/2 teaspoon chipotle powder 

1/2 teaspoon ground black pepper 

1/4 (5.6-ounce) bag DIANA® Spicy Lime Palitos, finely crushed 

2 tablespoons grated Cotija cheese 

4 medium ears fresh corn, husks and silks removed 

2 tablespoons unsalted butter, melted 

Lime wedges for garnish (optional) 

Preparation

  1. Prepare outdoor grill for direct grilling over medium-high heat; if using wooden skewers, soak in water 20 minutes. In small bowl, stir mayonnaise, cilantro, lime zest, chipotle powder and black pepper. Makes about 1/3 cup mayonnaise mixture.

 

  1. In separate small bowl, stir crushed palitos and cheese. Makes about 1/2 cup palitos mixture.

 

  1. Insert skewers halfway into 1 end of each ear of corn; brush corn with butter. Place corn on hot grill rack; cover and cook 8 minutes or until grill marks appear, turning every 2 minutes. Spread corn with mayonnaise mixture; sprinkle with palitos mixture and garnish with lime wedges, if desired. Makes 4 elote.
