Pozole is a beloved dish that’s perfect for family gatherings or a cozy meal at home. This hearty soup, made with tender pork, hominy, and a rich broth, is a true taste of tradition. Topped with fresh veggies and a squeeze of lime, it’s a dish that brings people together.

Ingredients

6 tomatoes

1/2 white onion

5 garlic cloves

8 guajillo chiles

2 pasilla chiles

1 ancho chile

7 liters of water

2 tbsp oregano

1 tbsp pepper

2 tbsp chicken bouillon

3 kg pork leg

1 kg nixtamal (hominy)

Lettuce

Radishes

Lime

Tortilla chips

Cilantro

Preparation

  1. Start by thoroughly washing the nixtamal, then place it in a pot with the 7 liters of water and bring to a boil for 40 minutes. While it boils, clean the chiles by removing the seeds and cut them into small pieces.
    Toast the chiles in a little oil, being careful not to burn them, and then add them to a blender.
  2. In the same pan where you toasted the chiles, add a bit more oil and sauté the tomatoes, onion, and garlic until they are golden and soft. Once done, add them to the blender along with the oregano, pepper, bouillon, and salt. Blend until smooth.
  3. Add the pork to the pot with the nixtamal and pour in the blended sauce. Cover and cook on medium-high heat for about 1.5 hours, or until the meat and hominy are tender. Taste and adjust the salt.
    Serve with lettuce, onion, radishes, and lime.
