Crispy Chicken Caesar Sandwiches on Toasted Garlic Bolillos

We’ve reimagined the classic Caesar salad by serving it atop golden-brown breaded chicken cutlets, tucked inside fresh-baked Vallarta Bolillos. The star of the show is a rich, house-made roasted garlic and Parmesan spread that adds a savory, gourmet depth to every crunchy bite. Perfect for a quick weeknight dinner or an elevated weekend lunch!
Ingredients
16 peeled garlic cloves
3 tablespoons olive oil
1/2 cup shredded Parmesan cheese
1 tablespoon chopped fresh Italian parsley
1 teaspoon fresh ground black pepper
1 teaspoon fresh lemon zest
4 bolillo rolls, split
1 cup vegetable oil
4 uncooked breaded chicken cutlets (about 6 ounces each)
3 cups chopped romaine lettuce
1/4 cup creamy Caesar dressing
1 tablespoon fresh lemon juice
Preparation
1. Preheat oven to 325°. Place garlic in center of 12-inch square sheet aluminum foil; drizzle with olive oil and enclose in foil, sealing edges. Bake foil packet directly on oven rack 40 minutes or until garlic is soft and golden brown. Transfer garlic mixture to small bowl; mash with back of fork until almost smooth. Stir in 1/4 cup cheese, parsley, 1/2 teaspoon pepper and lemon zest.
2. Increase oven temperature to 375°. Place rolls, cut side up, on rimmed baking pan; spread with garlic mixture and bake 6 minutes or until lightly browned and crisp.
3. In large skillet, heat vegetable oil over medium heat. Add chicken; cook 8 minutes or until internal temperature reaches 165°, turning once. Makes 4 chicken cutlets.
4. In large bowl, toss lettuce, dressing, lemon juice, and remaining 1/4 cup cheese and 1/2 teaspoon pepper. Makes about 3 cups salad.
5. Fill rolls with chicken cutlets and salad. Makes 4 sandwiches.
