This Chipotle-Orange Glazed Ham is the perfect blend of sweet, smoky, and citrusy flavors — a show-stopping holiday centerpiece that’s easier to make than it looks. A spiral-sliced ham is glazed with a bold mix of orange marmalade, chipotle peppers en adobo, fresh citrus, spices, and brown sugar. Ingredients
1 (7- to 8-pound) spiral sliced bone-in half ham
1 jar (12 ounces) orange marmalade
1/2 (7-ounce) can chipotle peppers en adobo
1/2 cup fresh orange juice
1 tablespoon fresh orange zest
1/2 cup packed light brown sugar
1 tablespoon chopped fresh cilantro
2 teaspoons ground black pepper
1 teaspoon dried Mexican oregano
1 teaspoon ground cumin
Preparation
1. Preheat oven to 325°. Place ham, cut side down, on rack in large roasting pan lined with aluminum foil; bake 1 hour or until internal temperature reaches 90°.
2. In blender, purée marmalade, chipotle peppers, orange juice and orange zest; transfer to small saucepot. Add sugar, cilantro, black pepper, oregano and cumin; heat to a simmer over medium heat. Simmer 2 minutes, stirring occasionally; remove from heat. Makes about 2 cups glaze.
3. Remove ham from oven; brush with some of the glaze. Return ham to oven; bake 45 minutes or until internal temperature reaches 130°, brushing ham with glaze every 15 minutes. Carefully place ham on serving platter; tent with aluminum foil and let stand 15 minutes. (Internal temperature will rise to 140° upon standing.)
4. Serve ham with remaining glaze.
