Chilaquiles Rojos o Verdes (Red or Green Chilaquiles)

Chilaquiles are a beloved Mexican dish that brings comfort and flavor to any meal of the day. Made with crispy tortilla chips simmered in your favorite sauce and topped with delicious toppings like crumbled cheese, fresh crema, and eggs or shredded chicken, this dish is as versatile as it is tasty.

Ingredients

2 cups Vallarta® Supermarkets Salsa Rojo or Verde plus additional for serving (optional) 

1 1/2 cups shredded skinless rotisserie chicken 

6 cups Vallarta® Supermarkets Tortilleria Premium Tortilla Chips 

2 radishes, thinly sliced 

1 avocado, peeled, pitted and thinly sliced 

1 jalapeño pepper, thinly sliced crosswise 

1/2 cup crumbled queso fresco 

1/2 cup Mexican crema 

1/3 cup pickled red onion 

2 tablespoons chopped fresh cilantro 

Preparation

  1. Heat large, nonstick skillet over medium heat. Add salsa and chicken; cook over medium heat 5 minutes or until slightly thickened, stirring occasionally. Add 4 cups chips; stir to coat. Add remaining 2 cups chips; stir to coat and cook 1 minute or until chips are slightly softened. Makes about 8 cups chilaquiles.

 

  1. Serve chilaquiles topped with radishes, avocado, jalapeño, queso fresco, crema, onion, cilantro and salsa, if desired.
