Ingredients

1/2 pound tamarind pods, shells removed 

1/2 cup granulated sugar 

Ice 

Dulce de tamarindo candy sticks, lime and/or orange wheels for garnish (optional) 

Preparation

  1. In large sauce-pot, heat tamarind pulp, sugar and 4 cups water to a boil over high heat; cook 10 minutes or until starting to soften, stirring occasionally. Remove from heat; let stand 2 hours or until tamarind pulp is completely softened.
  1. With hands, separate pulp from seeds and strain through fine-mesh strainer into large pitcher; discard solids. Stir 4 cups water into pitcher. Makes about 6 cups.
  1. Serve drink over ice garnished with dulce de tamarindo candy sticks, lime and/or orange wheels, if desired.
