Ingredients

400g lean ground beef
1 large egg
2 cloves garlic, chopped
½ cup cooked white rice
1 tsp salt
¼ tsp black pepper
1 tbsp oil
3 celery stalks, sliced
3 large carrots, sliced
1 medium onion, chopped
1 tsp salt, plus more to taste
3 tbsp tomato paste
1 tsp dried oregano
Chicken broth
1 cup green beans, cut into pieces
1 large potato, diced
Chopped cilantro

Preparation

In a large bowl, combine all the ingredients for the meatballs. Mix with your hands until well combined.


Form meatballs and set aside. Heat a large pot over medium-high heat. Add the oil, celery, carrots, onions, and 1 teaspoon of salt.


Stir to combine and cook for 8 minutes, until the onions are softened.

Add the tomato paste and dried oregano. Mix until the tomato paste has fully coated the vegetables.

Add the broth and stir to combine. Bring to a boil, then reduce the heat to low.


Add the meatballs to the pot one by one. Bring the soup back to a simmer, then cover and cook for 15 minutes.


Add the green beans and potatoes. Cover and cook for an additional 15 minutes.

Add the cilantro, stir, and taste. Adjust the salt if necessary.
